Custard. Pastry. Icing. Repeat. Brisbane's bakeries take the humble snot block seriously — deadly seriously. This crawl hits 10 of the city's finest vanilla slice purveyors, from an Italian pasticceria that's been at it since the 1930s to a French mille-feuille hiding under the Story Bridge. Pace yourself. The custard gets thicker as the day goes on.

22 Baildon St, Kangaroo Point QLD 4169
Tiny authentic French bakery tucked under the Story Bridge. Everything baked daily using ingredients imported from France. The vanilla slice here is a proper mille-feuille — caramelised puff pastry, vanilla cream, the works. Get in early, they sell out fast and don't apologise for it.
25 Balaclava St, Woolloongabba QLD 4102
Family-run, baking seven days a week. Artisan breads and bakery treats made fresh daily. Their vanilla slice is a no-fuss, properly executed classic. Short walk from Kangaroo Point via the Goodwill Bridge if you're feeling energetic.
Shop 1, 161 Grey St, South Brisbane QLD 4101
Authentic French patisserie in the heart of South Bank. The name literally means 'it's a piece of cake' and they mean it. Their vanilla slice sits alongside some of Brisbane's most serious pastry work. Great spot to sit outside and people-watch between bites.
97 Sandgate Rd, Albion QLD 4010
Nearly three decades of feeding Brisbane. A genuine institution. The vanilla slice here sits alongside legendary sausage rolls and caramel slices. Their attention to quality is the thing — everything is made properly, every day. Multiple locations but the Albion original is the one.
18 King St, Bowen Hills QLD 4006
Looks unassuming. The vanilla slice looks small and pricey at around $8.60. Order it anyway. The cream is the best in Brisbane according to people who've done this research properly. Get there by 10am — there are never many left and they don't restock throughout the day.
4/621 Wynnum Rd, Morningside QLD 4170
The vanilla slice here comes in regular serving or as a 25cm or 35cm slab — pre-order the slab with 2 days' notice if you're committed. The chocolate vanilla slice variant is a curveball worth trying. Call ahead to confirm they have slices available; they sell out by mid-afternoon.
2/16 Latrobe Tce, Paddington QLD 4064
Small bakery in Rosalie Village with serious pastry credentials. The vanilla slice here is old school — one layer of cream, two layers of crust, buttercream icing with a chocolate design on top. Custard purists may quibble. Mark, who grew up eating vanilla slices, says it's his favourite in Brisbane. That counts for something.
584 Waterworks Rd, Ashgrove QLD 4060
Family-owned since 2003, baking since the 1930s in this building. Brisbane's only Italian bakery serves a French vanilla slice — handmade puff pastry, vanilla custard, fondant on top. The icing is sweet, the cream is thick and very creamy. Street parking available. Stay for the cannoli if you have any room left.
3/22 Mains Rd, Eight Mile Plains QLD 4113
Eight Mile Plains' go-to for serious French patisserie. Their vanilla mille-feuille sits alongside berry tarts, tiramisu, and mango guava cheesecake. The cabinet here is a commitment test — you came for the vanilla slice but you'll leave with three things you didn't plan on buying.
6/737 Waterworks Rd, Chandler QLD 4155
Banneton bakes with high quality wholesome ingredients and it shows in everything including the vanilla slice. A neighbourhood gem that doesn't get the citywide attention it deserves. This is the dark horse of the crawl — the one nobody expected to still be standing after nine previous stops.
